Deelish Bakes


Lately we like beef very much. I tried to grill it, marinate & grill it as well as using a skillet to stir fry minced beef. And I would like to stew, braise, roast and pot roast it. However, buying meat in Estonia is not as direct due to the language barriers. If there is a particular cut, it is labelled in Estonian language. Hence while looking up for some help online, I chanced upon this chart and would like to share it with my foodie friends on Delish Recipes. Here's a video which I find helpful (by Gordon Ramsay) about recommending tips on how to buy a Steak and prepare it.

Scones Hungarian pogacsa


Using a yeast dough or short dough, you can make scones together with butter, eggs, milk, sour cream, the Hungarian way.  Sometimes, they are mini ones, topped with cheeses of various types. I particularly like those with pork crackling! Tepertő is the sinful addition, but it makes Pogacsa so special in taste and so addictive. You may also find other types like with poppy seeds, caraway seeds, garlic, sweet paprika, black pepper, sesame seeds, some even sunflower seeds. Even the sizes and consistency inside differs from place to place. Traditionally, Pogacsa is an appetiser or snack or finger food at parties, during small gatherings, meetings, discussions. Some people also eats it together with goulash.

Taiyaki (鯛焼き, literally "baked sea bream") is a Japanese fish-shaped cake. The most common filling is red bean paste that is made from sweetened azuki beans. Other common fillings may be custard, chocolate, cheese, or sweet potato. Some shops even sell taiyaki with okonomiyaki, gyoza filling, or a sausage inside. Taiyaki is made using regular pancake or waffle batter. The batter is poured into a fish-shaped mold for each side. The filling is then put on one side and the mold is closed. Biryani was brought to the Indian Subcontinent by Muslim travelers and merchants. Local variants of this dish are not only popular in South Asia but also in Arabia and within various South Asian communities in Western countries.

Malaysian Biryani Recipe
Ingredients:-
1 Chicken buillion
1 clove garlic
5 cm piece ginger
1 tbsp poppy seed
10 cashew nuts
10 almonds
4 tbsp butter
5 cloves
5 cm cinnamon stick
1 cup Onion (chopped)
1 tsp curry powder
1 tsp tumeric powder
1 can of coconut milk
2 cup rice




1. Mix Chicken buillion with 2 tbsp of warm water.
2. Grind together garlic, ginger, poppy seed, cachew nuts, and almonds. Heat butter and fry cloves, and cinnamon until fragrance.
3. Then add in the grinded ingredients, curry powder, tumeric powder and chopped onions.
4. Mix the ingredient well, and then stir in the Chicken buillion and salt to taste.
5. Stir to mix and cook covered at mediem heat for 10 minutes.
6. Add in coconut milk. Mix until mixture is well blended.
7. Add in the washed rice and cook it.
8. Make sure that the rice fully absorbs the gravy, and cook rice at low heat.

Cupcake
Today I made half a dozen of cupcakes with a new set of silicon muffins cups. Following are the ingredients of my first batch of muffin cupcakes:-

1 cup flour
1/4 teaspoon salt
1 teaspoon sour cream
1/4 cup margarine, softened
1/2 cup sugar
1 egg
1/2 cup milk
1/2 teaspoon vanilla essence (optional)
added some blueberries and raspberries; they gave purple and pink colours respectively






Directions:
1 preheat oven to 375f or 170c; brush oil on the silicon muffin cups.
2 cream butter and sugar till light and fluffy. beat in egg.
3 add flour (mixed with sour cream and salt) alternating with milk beat well; stir in berries.
4 divide evenly and bake for 18 minutes. let cool in pans.

Homemade Lemonade - May 1, 2011

Today, I would like to share with you our personal favourite and the best Home-made Lemonade Recipe. Those lemons I bought from the Hunyadi Piac near Oktogon in Budapest were lovely, and so fresh! Lemonade drink for a Sunday is a refreshing way to welcome the Spring, yes, the Spring in Budapest shall arrive in a few days, yay! For weight watchers, this is a great master cleansing diet too.




This is the proportion of the ingredients:
200 g white sugar
1 liters water
200 ml lemon juice

1. In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
2. Remove seeds from lemon juice, but leave pulp. In pitcher, stir together chilled syrup, lemon juice and remaining water.
3. Enjoy :)

Per servings yields 72 calories

This is an easy to make appetizer with tuna, mayonnaise, salt, pepper, onions and cocktail tomatoes. Serve with bite-sized baguette that has been lightly toasted (I used the hungarian Kifli here). Sprinkle some parsley and there you go! Enjoy!

Armenian Appetiser

The Armenian spread of appetisers includes large vegetarian stuffed meatball called Topik, cheese of various types, Chechil, pickled items such as: cucumber, ripe tomatoes, unripe tomatoes, cabbage, cauliflower, grapes, carrots, garlic. Stuffed vegetarian items, grain, fresh herbs, salads, phyllo dough pastries, fried or baked bread dough, byoereks, de rigueur, lavash and flat breads. Beef phanaeng or beef panaeng พะแนงเนื้อ is a Thai dish based on beef in a curry sauce. The traditional dish contains beef cut in thin strips, kaffir lime leaves, coconut milk, phanaeng curry paste, palm sugar and fish sauce.
This dish typically contains thick coconut milk and will have very little other liquids added (hence a dry curry). It is generally milder than other Thai curries.
