Chocolate ganache is perfect to use as filling, topping, glaze or sauce. ganache first showed up around 1850. It is hard to know the true story of where the recipe was born because both France and Switzerland claim they are the creators of the original recipe. The famous book “Larousse Gastronomique” states that the recipe was created in Paris and so this is true to the original story of the history of ganache.

The lifestyle we lead is quite different to the lifestyle our grandparents led 100 years ago. Our grandparents walked a lot more than we do. Entertainment back in the day was mopping the floor and dancing. Today we stick to screens of smartphones and tablets to catch the latest shows and social networking sites. Food 100 years ago was more natural and with an organic twist. Layer of cake, layer of mousse, layer of cake, layer of mousse and we can continue all day!

Chocolate cake is one of my favorite desserts and I am sure a lot of people feel the same way. This recipe is really special because it combines the strong and rich flavor of the chocolate and the soft texture of the mousse.

The complexity in making chocolate from bean to bar may limit smaller chocolate factories opportunities in crafting unique chocolate varieties, a diverse range of chocolate types or in having the chocolate meet certain certifications due to equipment limitations (Pareve Chocolate versus Kosher chocolate).

What is couverture chocolate?

All chocolate bars may contain the same base ingredients of cocoa mass, cocoa butter, sugar as well as flavor enhancers like vanilla or milk powder. Couverture chocolate is a colloquial term referring to a particular type of chocolate that is special type compared to other regular chocolate bases. It is the finest professional quality chocolate that is produced with the highest percentage of cocoa butter using premium cocoa beans. Couverture chocolate is grounded to a finer texture during the production process and that results in superior flavor and texture. It melts smoothly and gives an elegant glossy sheen when tempered. Couverture chocolate is ideal for molding, enrobing truffles and fine candy making.

What is the difference between compound chocolate and couverture chocolate?

The difference between couverture and compound chocolate is significant because unlike couverture chocolate, compound chocolate uses cocoa powder, instead of chocolate liquor. Compound chocolate also uses vegetable oil non-cocoa fats instead of cocoa butter. Compound chocolate does not require tempering to set up shiny and hard as compared to couverture chocolate.

If you’ve watched the Sponge Bob, you probably remember this phrase. (I have tons of dub smash videos impersonating the sponge bob chocolate guy). Ok, maybe not something to brag with  But it is probably the best way to emphasize how much I love chocolate, (Ok the sponge bob guy is angry) I get excited by the mere mention of the word, but you get the analogy.


Chocolate Pancakes 
The internet is filled with chocolate recipes, and oftentimes when I am too tired to cook I just browse around to get some ideas for my next chocolate meal. On a late summer night I was doing my nights research when I stumbled across http://cuterecipes.com/ …Oh my God, there were so many mouthwatering recipes in one place. To be honest sometimes I get dizzy from scrolling, so I’ve decided to search meals by category, and since lately I have been hooked on pancakes, I decided to narrow my search down to pancakes. And boy was I right to do this, the best American pancake collection abounds with tasty recipes including my favorite chocolate ones!


The Chocolate Pancakes with Chocolate Sauce, Strawberries and Bananas are definitely on the top of my list (for now). What I loved was the sweetness of the chocolate that pairs perfectly together with that sweet and savory strawberry taste, and for some extra savory touch I replaced the banana for raspberries. A mouthful of happiness is what I call it! I haven’t enjoyed in a meal like this in a while.


Double Chocolate Pancakes


Double chocolate, double the trouble… Or not? Well it depends. If you are referring to my stomach ache after I’ve finished eating a dozen of these pancakes then it is a trouble….But if you were thinking of going to the trouble of making them, as in the difficulty level of preparation, you, my friends are mistaken. This recipe makes use of cake mix, so the only thing you have to do is just stir everything together, make a batch, cook it and eat some pancakes. Yes, that easy!

While at the double chocolate pancakes theme, it would be unfair if I didn’t share the next recipe with you…If you are a Reese’s enthusiast, like I am, then you will definitely love the Reese’s syrup and double chocolate pancakes recipe. Reese’s are the main star of the chocolate syrup, but you can always add some more on top, which makes this recipe, the perfect one for anyone who loves these peanut butter cups.

Tried out a yummy new recipe this weekend while I was home. This one came from Rachael Ray's magazine. This one was easy to veganize by subbing margarine for the unsalted butter and 1/4 tsp salt (added to the fudge ingredients, not the base) called for in the original recipe. So simple to make! They're REALLY rich though, so cut 'em small!

Chocolate Peanut Butter Fudge Crunch 6 ounces semisweet chocolate, chopped (or use chips) 2 sticks (8 ounces) plus 1 tablespoon margarine One 16-ounce jar creamy peanut butter 3 cups crispy rice cereal 3 cups confectioner's sugar

1. Line an 8-inch square baking pan with parchment paper. In a medium saucepan, melt half of the chocolate and 1 Tbsp margarine over low heat. Remove from the heat; stir in 1 cup peanut butter, then 2 cups rice cereal. (I plan to up this to 2.5 cups the next time I make these.) Spread the mixture evenly in the prepared pan; refrigerate until set, about 15 minutes. Wash out the saucepan.

2. In the saucepan, combine the remaining 2 sticks margarine; melt over medium heat, stirring. Remove from the heat and stir in the remaining peanut butter and the confectioner's sugar. Spread half of the peanut butter mixture over the cereal layer. Top with the remaining 1 cup cereal (I used closer to 1/2 cup here to be sure the fudge layers actually stuck together).

3. In a small bowl, microwave the remaining chocolate at medium power until melted, 1 1/2 minutes. Stir into the remaining peanut butter mixture. Spread evenly on the cereal-topped peanut butter layer; refrigerate until set, about 45 minutes. Cut into 16 pieces. (I actually cut mine smaller since these are SO rich. I probably got closer to 30.)

Csiga is the hungarian word for 'snail'. This pastry resembles the shape of snails and that's why its name. It is a very popular breakfast or snack, be it served for tea or your afternoon refreshment :)

Ingredients:-
20g fresh yeast
500g flour
50g soft butter
300 ml lukewarm milk
1 egg yolk
4 tsp sugar plus a pinch
1 pinch of salt

4 tsp unsalted butter, melted

Chocolate filling:

4 tsp cocoa powder
8 tsp powdered sugar


Steps:
1. In small bowl, dissolve yeast in slightly warm milk with 1 teaspoon of the sugar. Let stand 5-8 minutes.

2. Combine the flour, sugar and salt.

3. Mix yeast mixture, oil (from 4 teaspoons of unsalted butter, melted) and egg yolks together lightly.

4. Knead it until smooth.

5. Cover with a cloth and let the dough rise. This takes about 40minutes.

6. When it has risen to double its original size, put it on a tabletop and roll it out.

7. Spread some butter on the dough and sprinkle with sugar and instant cocoa powder.

8. Roll the dough with the filling inside so that you get a long roll.

9. Cut in to slices. And put the slices on to a well-greased baking tin, leave it to rise again for about 15 minutes.

10. Bake the snails in preheated 200 degree C oven for about 15-20 minutes until snails get a nice golden brown colour.
