Muffin Cupcakes (Zannnie)
Today I made half a dozen of cupcakes with a new set of silicon muffins cups. Following are the ingredients of my first batch of muffin cupcakes:-
1/4 teaspoon salt
1 teaspoon sour cream
1/4 cup margarine, softened
1/2 cup sugar
1 egg
1/2 cup milk
1/2 teaspoon vanilla essence (optional)
added some blueberries and raspberries; they gave purple and pink colours respectively
Directions:
1 preheat oven to 375f or 170c; brush oil on the silicon muffin cups.
2 cream butter and sugar till light and fluffy. beat in egg.
3 add flour (mixed with sour cream and salt) alternating with milk beat well; stir in berries.
4 divide evenly and bake for 18 minutes. let cool in pans.
